The color alone is worth it — that opaque emerald-green liquor looks almost jewel-like in the cup, and the minerality gives it a clean, crisp finish that lasts. I brewed it a touch cooler than usual and the depth still came through beautifully.

That volcanic soil really comes through — there’s a stony, almost mineral sharpness under the sweet green that I’ve never tasted in a spring tea before. I brewed it slightly cooler than usual and the umami just unfolded. This is my new favorite way to start the morning.
