Saemidori Shincha selezionato a mano da Nishi-san

I’ve had a lot of green teas that turn bitter by the third steep, but this one stayed clear and sweet throughout the morning. The light steaming really lets those young Saemidori leaves shine, and the liquor is so clean it looks like liquid jade. Already looking forward to the next pot.

The first steep poured out practically clear but tasted like liquid spring—that delicate, grassy sweetness you only get from lightly steamed young leaves. I brewed it cooler than usual, around 70°C, and the emerald color stayed bright through three infusions. A quiet luxury for summer mornings.

The lightly steamed leaves brew up so clear and bright, like liquid glass with a hint of green. I've been sipping it slowly each morning and the freshness really comes through in every cup, even the third steep holds its character.
