Nishi Sencha Shincha (Première récolte)

The umami is genuinely dewy and smooth, not bitter at all for a green tea. Brewed this every afternoon for a week and the vivid, juicy flavor holds up nicely on the second steep.

That first sip hit me with a real dewy umami kick, and the mouthfeel is so smooth it almost feels creamy. I've been brewing it a bit cooler than usual and the juicy green notes really come through clean without any bitterness.

The second steep was even smoother than the first, and that umami really coats your mouth without any bitterness. I brewed it at 160°F and it stayed clean and juicy for three rounds, which is pretty rare for a green tea. This is my new go-to for hot summer afternoons.
